Welcome to Saint, a unique cocktail bar in the stunning seaside town of Nice on the French Riviera.

Saint is a Passion project from our Founder, Ruben O'Connell & General Manager Thomas Shortt .

We are passionate about crafting exceptional cocktails using only the best ingredients, quality beer and beautiful wine.

After-Eight just like the chocolate only better and boozy

Soft, a little playful, but there’s something deeper going on.

Peach & Mercy leans delicate at first glance, clarified peach yoghurt, bright citrus, served clean like a martini, but then the bubbles settle in and stretch it out, giving it a quiet lift and a bit of attitude.

It’s light, but not forgettable. Smooth, but with just enough edge to keep you there a second longer than you planned.

Jean-Claude Pandan

A soft split between silk and sharp — balanced, controlled, slightly showy if you catch it at the right angle.
Pandan and coconut keep it smooth, pineapple lands the final hit.

Some call it ‘just a Tuesday,’ we call it research. Cocktails shaking, lights glowing, someone pretending to ‘work’ on their laptop. Saint doing what Saint does best. Come for one, stay for three, pretend it’s all part of your productivity plan.

Where every detail matters , from the glass in your hand to the music in the room. Saint isn’t just a bar, it’s a feeling.

Our builders have been hard at work making sure Saint is looking beautiful, meanwhile we have been hard at work making sure we love and are passionate about what we bring to you.

Construction well under way. You can see our custom @behindbarsagency bar hiding in the back ready to be unboxed.

As many know opening a bar is not a fast and easy process. Even more so when you decide to open on the other side of the world than you have been living in. We are lucky enough to have a great international team on this project and can’t wait to show you the update as we get ready to open the doors. Much love from the team at Saint.
